Did you pick the wrong time to go dairy-free?
I’m here to help you through Superbowl Sunday which is among America’s top eating days, after Thanksgiving.
Yes, you can easily get through a big eating day like this, dairy-free no problem!
Get this: there will be 1.25 billion chicken wings polished off as people watch the game. And what goes best with those wings? That’s right, ranch dressing!
The original ranch is made with buttermilk and mayonnaise if you make it from scratch, but most people use the famous Hidden Valley bottled dressing which is shelf stable to 150 days or about 5 months. A rather scary thought.
So what to do?
Make this new and improved dairy-free buttermilk dressing recipe, that I’m not kidding, tastes just like Hidden Valley Ranch, and is nutrient dense, creamy and delicious.
You won’t feel like you’re missing out for one second.
It’s a great way to add heart healthy fats to your diet, too.
The cashews are rich in “heart-friendly” monounsaturated fatty acids that help to lower bad LDL cholesterol and increase good HDL cholesterol.
It gets it’s creaminess from the soaked cashews and pinenuts.
The onion powder adds that familiar “ranchiness” flavor we all love. I know I do
This is one of those dishes that you could put out for guests and not say a word, and no one would even know the difference.
Or simply make a separate dish for yourself and marvel in the fact that you get to have your cake and eat it, too!
This is what I love about healthy eating.
You don’t have to give in to foods that don’t match your beliefs, tastes or health goals just because it’s a special occasion.
“Buttermilk” Dressing
Makes 1 1/4 cups
½ cup raw cashews, soaked (10-15 minutes of soaking is all you need)
½ cup raw pine nuts, soaked
¼ tsp salt
¼ tsp onion powder
Juice of 1 lemon
2 tsp rice vinegar (or white wine vinegar if you don’t have this in your pantry)
¾ cup water
3 tbsp chopped chives (optional)
Blend all ingredients but the chives and some of the water in a high speed blender till smooth. Then drizzle in the rest of the water slowly (stopping every now and again to scrape the bowl) until the mixture has taken on a smooth consistency. Toss the chives in the finished dressing at the end and stir.
